Superfood Ayurveda Breakfast

Starting the day with a delicious, power-packed breakfast helps you feel light, energized and more resilient to stress. Lately I’ve been relishing this warm quinoa breakfast packed with nutrients, spices, protein and amino acids. It’s perfect for Spring, which is Kapha season. It’s lighter than my similar oatmeal version and pairs perfectly with a little raw honey. If you’re looking for a healthy spin on breakfast, this video is for you!

Ingredients:

1 cup filtered water

1/3 cup quinoa

1 tsp cinnamon

1/2 teaspoon turmeric

1 tsp flax seeds

1/4 cup pumpkin seeds

1/4 cup goji berries

1/3 cup almond milk

1 tbs raw honey

Instructions:

Bring water to a boil. When water is boiling add the quinoa and reduce heat. Add all ingredients except for the honey and almond milk. Let simmer for 15-20 minutes. When quinoa is almost done cooking add the almond milk and let simmer for 5 more minutes. Serve in a ceramic bowl with honey on top.
